    Chef's Recipe:   Beet and Goat Cheese Ravioli

    Prep Time: 15min (cook time 1 hour)           Skill Level: Easy as can be              Serves:  4-6 people

    Ingredients:

    3lb        Large Red Beets
    1qt         Water
    8oz         Goat Cheese
    4tbsp     Butter
    4 oz        Walnuts
    Pinch    Brown Sugar
    Pinch     Black Pepper
    Pinch     Sea Salt or Kosher
    1tbsp     Fresh Tarragon, Chopped

    Method
    Cook Beets in a covered pot with some water for 1hour or until tender.  Peel and Cool Beets.  Slice paper thin with a mandolin or a sharp knife. Arrange the round slices in pairs and place a bit of goat cheese in the center of every other slice. Then place the empty slices on top and press the air out gently to seal the “ravioli”. To Cook; melt butter in a large skillet, place “ravioli” into hot butter and add walnuts, sugar, pepper and salt.  Cook for about 3 min over medium high heat on one side only.  Garnish with herbs or greens and serve hot.
