Learn how to taste wine and pair it with food. We will have an interactive discussion and a group cooking demonstration before we begin tasting. Each wine is paired with three different food pairings; one to elevate the wine one to elevate the food and in the third we strive for a perfect pairing and discuss "Perfect Pairings". Five wines and fifteen pairings included in the class constitute a fabulous lunch.

Learn the artisan traditions of naturally cured meat; Italian Salumi and French Charcuterie. Chef Joe Rueter, theGreenGrocer, with training at The French Laundry and in Norcia, Italy leads this very hands on lesson in Gastronomy. Class begins with a history of traditional Salumi & Charcuterie for contrast to today's methods of "Salami" making. Then we get right to work; Grinding, Seasoning, Emulsifying, Stuffing & Cooking Traditional Sausages. This class includes wine, lunch and students may take home their creations for further Fermenting or Smoking.
